Drawing inspiration from the 17th-century chef Antonio Latini, author of Lo Scalco alla Moderna, they crafted recipes that blended Old World traditions with New World ingredients, such as tomatoes, laying the foundation for Italy’s renowned pasta sauces and its global culinary influence.
