  • In the early 1950's, Carmelo Cucinotta, a young Sicilian, moved to Bologna, Italy’s culinary heart, during post-war recovery. Inspired by its lively food culture and dishes like fresh egg pasta and Parmigiano Reggiano, he launched CUCINOVA in 1953 at the Feast of San Petronio, a mobile food cart blending Sicilian and Bolognese flavors.

  • In the 50's and 60's Bologna, a vibrant food culture shone during the Feast of San Petronio, with dishes like tagliatelle al ragù and tortellini. CUCINOVA’s chefs, inspired by 17th-century chef Antonio Latini’s fusion of Old and New World ingredients, crafted recipes that shaped Italy’s iconic pasta sauces and global culinary influence.
